Pancakes!!! Those delicious, indulgent, heavenly delights with delicate, crispy edges and a soft, fluffy center! Perfect for breakfast, lunch, or any other time of the day for that matter. You can have them plain, or with an endless selection of toppings. For some, a simple drizzle of maple syrup is all it takes. For others, this is the opportunity to get creative and experiment with different assortments: fresh fruit (my personal favorite), jam, butter, cheese, honey, yogurt, ice cream, sorbets, and Nutella! Just to name a few. There is definitely not a limit on how many toppings you can layer on your pancakes. Anything goes! The only thing that doesn’t go, is the traditional pancake recipe. Traditional pancakes are made of, among other ingredients, white flour, butter, sugar.
I like to think we live a little healthier nowadays. In my home, we don’t use processed sugar, white flour, and we try to limit the amounts of butter and packaged food we consume. If you’ve been reading my blog for a while, you know that I’m all about finding healthier ways of cooking and suitable alternatives to satisfy my need for some widely popular foods (see my healthy, gluten-free French Fries Recipe and my healthy gluten-free Oatmeal Chocolate Chip Cookies). Over the years, I’ve experimented with different pancake recipes to find the one that truly hit the spot: the healthiest, easiest pancakes that will have you put down the carb-loaded option for good! Gluten-free, dairy-free, processed sugar-free, but protein-filled (great way to ensure high energy levels and a tummy that stays full for a while)! And I’m about to share it all with you!
You Will Need
2 eggs
1 banana
a dash of cinnamon (optional, but I always add)
1 TBSP almond butter (optional, but I always add)
1 TBSP almond milk (optional, but I always add)
1 TBSP almond flour (optional, but I always add)
Note: If you don’t have almond flour, you can also use gluten-free flour or whole wheat flour.
Yield: 4 medium size pancakes
Crack the eggs into a ball and whisk. Mash up the banana and fold in the eggs. Add the rest of the ingredients and mix. Voila, you now have your healthy pancake batter!
Grease a pan with Coconut Oil (or Olive Oil) and warm up over medium heat. Pour the batter into the pan using a ladle. Cook for about 2 min per side and you’re done. Easy breezy, no? Serve with the toppings of your choice.
